- 500 grams lauki or bottle gourd (grated)
- 8 tbsp besan or chickpea
- 1 tbsp ginger garlic paste
- 2 onions finely chopped
- 2 green chillies finely chopped
- 1 tbsp coriander powder
- 1 tbsp garam masala
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- to taste Salt
- 1/4 cup Chopped cilantro leaves
- as required Oil for deep frying
- for kofta curry:
- 3 onions finely chopped
- 4 green chillies
- 1/2 tbsp ginger garlic paste
- 8 tomatoes (grind tomatoes, green chilli and cashews)
- 1 tbsp cashews
- 100 grams fresh curd
- to taste Salt
- 2 tsp turmeric powder
- 1 tbsp red chilli powder
- 1 tbsp coriander powder
- 1 tbsp garam masala
- as required Chopped cilantro leaves
- 5 tbsp Smoked mustard oil
Steps to make to make Lauki kofta curry
- Peel the bottle gourd, and then grate it in a bowl. Squeeze it well and keep the leftover water in a bowl. It will be used afterwards in curry.
- Now add all the ingredients into it. I.e. besan, ginger garlic paste, onion, green chilli, salt, red chilli powder, coriander powder, garam masala, turmeric powders and cilantro. Make into a soft dough.
- Grease your one hand with water. And start making medium sized balls out of it.
- Now take a pan, heat oil in it. And start frying these balls on medium flame so that they are properly cooked from inside too. If you'll fry it on full flame the balls will get brown in colour soon from outside, but will remain uncooked inside.
- This is how your balls will look like from inside.
- Place all the fried balls in a plate. Then start with the curry making.
- Take a saucepan, put oil in it. Then add ginger garlic paste in it. Stir it for a while till golden brown.
- Then add chopped onions. Fry them until light pinkish in colour.
- Add all the spices and condiments. Give all of them a nice stir.
- Then add the ground tomatoes, green chilli and cashews.
- Keep frying them till the oil separates.
- Keeping the flame on medium, add curd. And keep stirring it.
- Now add that leftover water and some more to adjust the consistency of your gravy. Let it come to a boil.
- Add the fried balls or koftas. Cover and let it cook for 5-8 mins.
- Serve hot garnished with cilantro leaves with your choice of chapati or rice!
